Scale
- 1 cup canola oil
- 2 russet potatoes
- Salt & pepper, to taste
Instructions
- Fill a small mixing bowl with cold water and set aside.
- Using a mandolin, thinly slice the potatoes and place the slices into the bowl of cold water.
- Heat canola oil in a medium-sized pot over medium heat to approximately 350° F (test the oil to see if it’s ready by slowly dipping a dry potato slice in it. If the oil bubbles, it’s ready).
- Take about half of the potatoes out of the cold water and place them onto a couple of paper towels. Dry the potatoes completely.
- Place the potatoes into the oil and occasionally move them around using a skimmer to ensure they don’t stick together.
- Once the potatoes are golden brown, remove them from the oil and place them on a sheet pan, immediately season them with salt and pepper, or your choice of seasonings.
- Repeat steps 4-6 for the remaining chips.
- Serve and enjoy!
