Guess what season it is?!? That’s right, it’s comfort food season, and you’ve never had a chicken noodle soup like this, I guarantee it! Containing a vibrant and zesty combination of ingredients, the lime juice adds a tangy and very refreshing flavor, while the cilantro contributes a fresh and slightly earthy note to this tropical and herbal twist to a famous fall classic.

As I write this post, I’m getting over a pretty bad cold. I can’t think of too many good things about being sick, but this soup is certainly one of them! Calling this soup good is an understatement. A few days ago I was feeling much worse than I am now, and my amazing wife made me this bowl of deliciousness, and I proceeded to eat it for three days straight! Even the kids, much to my disappointment “helped” us finish it off 🙄

Lime and Cilantro Chicken Noodle Soup Ingredients.
  • 2 Boneless, skinless chicken breasts
  • 2 limes, juice only
  • 1 pound petite potatoes, halved
  • 3 carrots, peeled and cut into 1/2″ slices
  • 2 celery stalks, cut into 1/2″ pieces
  • 1 bunch cilantro, minced
  • 1 pound Caridom noodles
  • 1 teaspoon black pepper
  • 1 teaspoon kosher salt
  • 1 teaspoon onion powder
  • 1 tablespoon garlic, minced
  • 2 tablespoons chicken base powder
  • 3 quarts water

Ingredient Notes

  • I recommend using red potatoes for any type of soup. Red potatoes tend to have a firmer texture than other varieties. Fingerling and petite potatoes also work well.
  • You can use any type of noodles you want for this recipe, just be sure that you cook them for the right amount of time. You don’t want them to be under or overcooked. Caridom noodles we used for this recipe, I also like wide or extra wide egg noodles for chicken noodle soup recipes.

How to Store Chicken Noodle Soup

  • Allow the soup to cool to room temperature and then place it in your refrigerator in an airtight container. For the best taste, you should eat the soup within a few days however, it will stay good for up to a week.

How to Reheat Chicken Noodle Soup

  • Warm the soup over high heat in a covered, appropriate-sized saucepan to 165 degrees Fahrenheit.

How to Make Mamá’s Lime and Cilantro Chicken Noodle Soup

  1. Season the chicken with salt (only use a pinch), black pepper, onion powder, and marinate in a small mixing bowl with lime juice. Allow it to sit for about 10 minutes.
  2. Meanwhile, in a large pot, bring the water to a simmer over medium-high heat.
  3. Once the water is simmering, add the marinated chicken breasts (with all juice), minced garlic, and chicken base powder. Cover the pot and allow to simmer for 30 minutes.
  4. After simmering for 30 minutes, add carrots and celery and simmer covered for an additional 15 minutes.
  5. Next, add potatoes, noodles, and cilantro and simmer covered for an additional 10 minutes. After 10 minutes, check the noodles for doneness.
  6. Check seasoning and add salt and/or pepper, to taste.
  7. Garnish with some more fresh cilantro.
  8. Serve and enjoy!
