- 2 Boneless, skinless chicken breasts
- 2 limes, juice only
- 1 pound petite potatoes, halved
- 3 carrots, peeled and cut into 1/2” slices
- 2 celery stalks, cut into 1/2” pieces
- 1 bunch cilantro, minced
- 1 pound Caridom noodles
- 1 teaspoon black pepper
- 1 teaspoon kosher salt
- 1 teaspoon onion powder
- 1 tablespoon garlic, minced
- 2 tablespoons chicken base powder
- 3 quarts water
Instructions
- Season the chicken with salt (only use a pinch), black pepper, onion powder, and marinate in a small mixing bowl with lime juice. Allow it to sit for about 10 minutes.
- Meanwhile, in a large pot, bring the water to a simmer over medium-high heat.
- Once the water is simmering, add the marinated chicken breasts (with all juice), minced garlic, and chicken base powder. Cover the pot and allow to simmer for 30 minutes.
- After simmering for 30 minutes, add carrots and celery and simmer covered for an additional 15 minutes.
- Next, add potatoes, noodles, and cilantro and simmer covered for an additional 10 minutes. After 10 minutes, check the noodles for doneness.
- Check seasoning and add salt and/or pepper, to taste.
- Garnish with some more fresh cilantro.
