This super easy macaroni salad is the perfect side dish for any occasion (or any meal) and only takes 10 short minutes to make!
Ingredients

2 cups gluten-free elbow macaroni, uncooked
1 cup frozen peas
1 tablespoon dijon mustard
1 tablespoon white vinegar
2 tablespoons mayonnaise
1/2 yellow onion, small dice
1 celery stalk, small dice
1 carrot, shredded
Salt & Pepper to taste
Instructions
- Cook the macaroni: Prepare the macaroni according to the package directions. Once the macaroni is finished, strain it using a colander and rinse it under cold water.
- Prepare the vegetables: while the macaroni is cooking, prepare all the vegetables and place them into a medium-sized mixing bowl.
- Combine ingredients: put cooked macaroni and all other ingredients into the same mixing bowl with the vegetables. Using a wooden spoon or your hands, along with disposable food-safe gloves, mix all ingredients.
- Season: add salt and pepper to taste.
